Coming to NYC as a pastry chef, I started off working at Eleven Madison Park***. However, I love to bring my flavors to a dining table near you! Having lived and traveled in Europe all my life, my cuisine has a little bit of Italy, France, Germany, Austria, and the Netherlands in it. Combined with an haute cuisine attitude from Eleven Madison Park and a rock ‘n roll vibe from my New Dutch cuisine, I want to create a meal and ambiance for a night you’ll never forget! A night to indulge in: The twenty-course dessert menu stands out from every other dessert experience you have ever tasted. A showcase of conceptual bites that combine classic desserts, haute cuisine dessert techniques, and desserts that are made with techniques from a savory kitchen. Inspired by John Coltrane, the menu feels overwhelming as much as it has a natural flow…In ten staggering ‘movements’ The courses will pass by, rather an opera than a restaurant.

Haute Cuisine, European inspired: 6-Course Tasting” 

European haute cuisine meal with a home-style vibe. The menu will change over time and, of course, with whatever ingredients are available in season and on the farmers market. Bring your own booze! I do have filtered water and wine glasses, so bring a nice bottle and I will take care of the rest!

“Exclusive line of filled chocolates”

In the Netherlands he is known for his exclusive brand of filled chocolates ‘bonbons’ under the name ChocoTed with flavors like Lagavulin Whisky, lapsang souchong and flavors of Tangier.

With ChocoTed he opens doors to new flavors, mature and inspiring. All made from real and pure ingredients, directly from nature. He gets his inspiration from everything and everywhere. From a thought, a painting, music, culture or a country. But always aiming for the best. From the base to the product. To create what you imagine. For me, that is perfection.

Projects include a Manhattan Cocktail bonbon, a Cava especial for the celebration from the Dutch Government, a chocolate and cigar pairing and a gluhwein special.
